Southwestern Sweet Potato Hash

Homemade Sweet Potato Hash
This skillet hash recipe is a ton of fun to make and chock full of color, veggies and flavor. It’s perfect to bring to a potluck and makes a ton. It is an all-in-one meal which means you don’t need to fuss around with sides and timing a bunch of different dishes.
The List
2 jalapenos
1 onion
Some coriander
1 avocado
3 or 4 sweet potatoes
4 eggs
1 ground turkey sausage
A couple dashes of cumin powder
Salt and Pepper to taste
To Do
-Peel the sweet potatoes and cut up into cubes and preheat the oven to 375 F.
TIP *To make the dish visually appealing, try cutting the potatoes in different cuts ways and sizes.
-Chop the onion (if you don’t have a mini food processor, I would definitely recommend getting one, it makes veggie chopping a breeze!)
-Devein and chop the jalapenos
-Lightly brown the turkey in the iron skillet over medium heat with some cooking spray. Set aside.
-Cook the onion and jalapenos in the meat remnants in the pan. Once the onions turn translucent, add the sweet potatoes. Add the cumin powder, some onion powder, pepper to taste.
TIP * We bought a pack of cumin seeds because they’re more versatile. We can cook the seeds directly on cuts of meat for flavor or chop up in the food processor to make into powder to add as a spice!
-You’ll want to cook until the sweet potatoes start to brown (about fifteen minutes). Careful not to stir too often, you want that nice texture that comes with the potatoes sticking lightly to the bottom of the skillet.
-Once browned, add the sausage and cook a few more minutes.
-Carve out four small divots in the pan for eggs. Crack the eggs right into the divots.
-Put the skillet into the oven and cook for about ten minutes, until the eggs harden and turn white. Chop up the avocado and some coriander.
-Once the skillet is removed from the oven, sprinkle the coriander and avocado on top.
